Whole Wheat Cherry Vanilla Muffins

Ingredients:

  • 1.5 C Whole Wheat Flour
  • 1 t Baking powder
  • 1/2 t Baking Powder
  • 1/2 t Baking Soda
  • 1/2 t Salt
  • 1/4 C Honey
  • 1/2 C Unsweetened Apple Sauce
  • 1 Lg Egg
  • 1 t Vanilla
  • 1/4 C Half and Half (can sub for milk)
  • 1.5 C Cherries whole pitted

Directions:

  1. Pre- Heat oven to 400F
  2. Combine all dry ingredients (flour, baking powder, baking soda, salt) in a medium bowl
  3. Combine all wet ingredients (Honey, Apple Sauce, Egg, Vanilla, and Half and Half) in a bowl. Then add the wet ingredients to the dry and mix untill smooth.
  4. Chop Cherries in half and fold into the batter. Spray pan and Divide batter into the muffin tin (I was able to get 9 muffind out of it)
  5. Put in oven and bake for 25-30 minutes

Side note:

I did not have a muffin pan so I used muffin holders (why mine are lopsided) I would suggest spraying the pan with oil or the cupcake holder. The muffin really attached itself to the cupcake holder and is hard to get off clean.
